This also serves as an aid to maintain the correct sharpening angle. In a few seconds, you can adjust either the 15° or 17° angle. Just turn the protrusions at the upper and lower ends of the stone.
The grinding stone builds on a long tradition of grinding with river stones. This makes for a very precise edge and also means there is less to clean up after grinding. The stone has two sides with different grits. The Brick Red side has a grit of 1000 and will be used for sharpening slightly dull knives. The White side boasts a grit of 6000, which is perfect for final smoothing.
It's ideal for Japanese kitchen knives, for example, but you don't have to worry about using the stone for regular filleting or pocket knives as well. It's very easy to work with. Just choose the grinding angle and place the blade on the point. Then you just continuously sharpen the whole knife blade up to the tip. You then continue in the same style for the other side of the knife.
