This also serves as an aid to maintain the correct sharpening angle. In a few seconds you can adjust either the 20° or 25° angle. Just turn the protrusions on the sides of the grinder.
The grinder has three grinding surfaces with different grits.Medium Diamond with 320 grit is used for sharpening slightly dull knives. The Fine Diamond 600 grit will quickly restore the edge to your knife. The diamond surfaces are complemented perfectly by the ceramic grinding surface, which takes care of the final edge finish. When the red slider on the plastic body is released, the blade will follow the entire grinding path of the blade without you having to tilt your hand like you would with a whetstone. The grinder will tilt and then return to its original position.
It is ideal for Japanese kitchen knives, for example, but you don't have to worry about using the sharpener for regular filleting knives, pocket knives, scissors or axes. Working with it is very simple. Just choose the sharpening angle and place the blade on the point. Then you just continuously sharpen the entire knife blade up to the tip. You then continue in the same style for the other side of the knife.
